Eggplant - Organic Early Long Purple
The Early Long Purple Eggplant are long slender purple eggplants which are low in calories and high in vitamins A, B and C. It is very easy to slice and meaty fruits. These plants produce very prolifically and when the eggplant is near maturity its coloring will deepen to a rich purple. The Early Long Purple Eggplant are firm with a mild eggplant flavor. Use in stews, sauces, or bake them.

Growing Info: 75 days to mature after germination. Sow Organic Early Long Purple Eggplant seeds approximately 3' apart in rows, keeping rows roughly 18" apart. Start seeds indoors in a warm, sunny location 8-10 weeks before transplanting outdoors. Wait 3 weeks after frost to transplant outside. Or, in warmer climates, sow directly into the garden. Eggplant requires full sun and rich, fertile, well-drained soil.
Suggestions: You can tell when eggplant is ripe by its glossy purple look. Harvest fruits while still shiny. Cut from the stem with a knife.
