Squash - Waltham Butternut
Waltham Butternut Squash (cucurbita moschata) is one of the best, most popular varieties of winter squash with a sweet, nutty taste similar to that of a pumpkin. Its outer beige skin is hard and thick whilst the inside flesh is orange. Its sweet, dry, orange-colored flesh makes it ideal for baking, as well as for pies. Butternut Squash can be roasted, sautéed, toasted, puréed, boiled or mashed.

Growing Info: 85 days to mature after germination. Very vigorous and dependable. Fruits average 8-9 in. long, 3-4 lbs. It can be harvested when small and used like a summer squash. Excellent resistance to vine borers. Stores very well.
Suggestions: Don't cut winter squash from the vine until firmly ripe (when you have a hard time making a dent in the shell with your thumbnail). Harvest squash before it gets cold outside.
