Kale belongs to a group of cabbage grown for their edible leaves which are green or purple, and unlike cabbage, the central leaves do not form a head. Some Kale is used as ornamentals. Lacinato Rainbow Kale (Brassica oleracea and Brassica napus) has great tasting loose leaves and stems in shades of red and purple, which is mostly seen in cool weather. This variety of Kale is super cold tolerant.
