White-Stemmed Bok Choy (Organic)
Bok Choy, Pok Choi or Pak Choi, (b. rapa chinensis) is a type of Chinese Cabbage. This variety does not form heads like the cabbage you are used to. Instead, they have green leaf blades with lighter and smaller bottoms. This type of cabbage is popular in Chinese and Southeast Asian dishes.

Growing Info: For a spring and early summer crop, sow seeds indoors in a seed starting mix. Sow seeds 1/4 inch deep and spaced about an inch apart. Seeds should germinate in 4 - 8 days. When seedlings grow to about 2 inches high, they will be ready to transplant. When fully mature, in about 70 days, the White-Stemmed Pak Choi leaves are dark green and have a mild, peppery flavor. This variety can be harvested early for baby greens in salads.
